One of the byproducts of the operations of large-scale commercial food operations is liquid food waste. This waste includes animal and vegetable fats, oils, and grease, collectively known by the acronym “FOG” (Fats,Oils & Grease). Left untreated, these FOG drain into the municipal sewer system, where overtime they accumulate and eventually cause massive sewer backups. These backups damage public infrastructure and are both expensive and time consuming to repair. Untreated restaurant discharge, also known as effluent, can also cause problems in municipal wastewater treatment facilities.

Because of this, the Environmental Protection Agency mandates the pretreatment of liquid waste discharge into municipal sewer systems. The goal is to remove FOG from the effluent in order to keep the sewer lines unimpeded and flowing freely. Grease removal systems, which include grease interceptors and grease traps, are used for this purpose.

Grease interceptors are installed after the various kitchen drains but ahead of the sewer lines. The contents of the drains collect in the grease interceptor. As long as they are not emulsified, FOG do not mix well with water. Being heavier than water, they separate and float to the surface, where they accumulate and are periodically removed by a skimmer. The FOG-free wastewater is then discharged into the sewer system. The accumulated grease can be recycled for use as biodiesel fuel.

Grease interceptors can be adapted for installation in a variety of situations. A high water table may precipitate the need for outdoor installation. On the other hand, limited outdoor space may require the interceptor to be installed below the sewer system, with the addition of a pump system to pump the water to the sewer. Tanks Direct furnishes both fiberglass underground systems and aboveground stainless steel units installed which are installed inside buildings.

     Features

    • Big Dipper Automatic Removal System

The innovative Big Dipper Grease Interceptor has several advantages over traditional concrete traps and is easy to use.

    • Fits Almost Anywhere

Traditional concrete grease traps require a substantial amount of space. For small facilities or commercial kitchens located in nontraditional locations (older buildings or a high-rise, for example), this can be a problem. The Big Dipper can fit almost anywhere. Many Big Dipper owners place them on the floor underneath the three-compartment sink.

    • Automatic Operation

The Big Dipper doesn’t require manual operation. It operates based on a digital timer control (preset with options for light, moderate, or heavy greasy output). The skimming wheel activates and transfers floating fats and oils to the removable holding chamber.

    • Easy To Clean

No special training or special equipment is required to clean the Big Dipper. The grease collector is easily detached and the grease can poured into a municipally-approved waste receptacle or be dumped into the kitchen trash for disposal. No suction trucks, contractors or special equipment is required.

    • Protects Internal Plumbing While Meeting Compliance Standards

For facilities that have long internal wastewater lines, such as hotels and hospital cafeterias, keeping grease from fouling internal plumbing is a major concern. A blockage in the kitchen’s own plumbing can trigger expensive emergency repairs. Big Dipper units can be placed next to grease sources, such as kitchen sinks, so that fats, oil and grease (FOG) don’t have to travel through your internal plumbing.

    • Free Delivery

The Grease Release FOG (Fat, Oil & Grease) separation system provides you with a highly effective non-mechanical solution for your commercial kitchen grease management requirements.

Food solid waste is removed and strained from the pot wash water via an internal fine mesh food basket. You have full control of the excellent recycling opportunity, deciding when to release FOGs to an external stainless steel container with 98% effectiveness.

    Grease Release Benefits:

    • Non Mechanical
    • Re-cycle-able Oil
    • Environmentally Friendly
    • Removes Higher Rate Of Food Solid Waste
    • Low Running Costs
    • Easy Maintenance & Installation
    • Services Sinks & Dishwashers
    • Complies With Building Regulations

    In-kitchen free maintenance

These units are strong and durable, easily installed and maintained in-house. Grease Release removes the need for bacterial dosing and does not require any hot or cold mains water connection.Other size units available, competitive prices on application.
